DAY 11  Half Way Through and enjoying it!

Creamy Sun Dried Tomato Pasta

This one is my favourite so far

1 Zucchini

1 Red 1 Yellow Pepper

1 cup Cashews soaked

1 Fresh Tomato

1/2 cup Sun dried Tomato’s soaked

1 sheet Nori

1 shallot chopped

2 Green onions chopped

A squeeze of fresh lemon juice

A handfull of Fresh Parsley

4 Yah Foods Nut “meat balls”

a pinch of Thyme and Himalayan sea salt

Combine all ingredients (EXCEPT Zucchini and Peppers) in Vitamix blend well.  Use potato peeler or slice Zucchini and pepper into pasta noodle shape.  Mix together and Garnish with Parsley and Yah nut “meat balls”
