Fresh Coco MIlk

I am on Day 20 of my 21 Day Raw Food Cleanse.  I am feeling really good.  I did go through a few phases where I wanted to cheat and have a latte a glass of wine or big steak but I stuck it out and feel empowered that I have almost completed it.

During the cleanse I have been making homemade Coconut Milk.  After the Cleanse I am going to be sticking to making my own nut milks.  It is so simple and fresh and tastes SO much better than store bought.

Take a mature Coconut and puncture with screw driver.  Drain out the coconut water.  Take the Coconut and wrap in a plastic bag.  I take the coconut to my stairwell and smash it a few times on the floor. (Also a great way to relieve tension and stress)

Rinse off Coconut meat and place in Vitamix or Blendtec.  I like to add a few dates and a half teaspoon of fresh Vanilla.  Fill Blender close to the top with Filtered Water.  Blend on High for a minute.

Pour into a medium Bowl through a nut straining bag.  Squeeze until the pulp is dry. Pour Milk into Glass container and Voila Coconut Milk!

I have been enjoying it over Gorilla Foods Granola or Organic Lives Granola.  Or after a Hard workout!
